Geographical indication protection “Khanh Hoa” for sweet snail products

On November 9, 2021, the National Office of Intellectual Property Director issued Decision No. 5160/QD-SHTT on granting a Geographical Indication Registration Certificate No. 00113 for the "Khanh Hoa" snail product. Khanh Hoa Fisheries Association is the organization managing this geographical indication.

Khanh Hoa is a coastal province located on the South-Central Coast. The dishes made from sweet snails, also known as "First Snails", are considered the outstanding dishes of the Khanh Hoa sea.

The meat of Khanh Hoa Snail weighs from 4.8 - 5.5g/snail, a large hepatopancreas weight from 1.55 - 1.87g/head, and low water content from 66.3 - 67.1. %, so when processing, snail meat is less damaged, but snail meat has a natural aroma, a sweet taste, and a stronger flavor than snails raised in other provinces.

Khanh Hoa province has a long coastline with a system of bays, islands, peninsulas, estuaries, and lagoons, and is less prone to wind and storms, making the form of snail farming in Khanh Hoa diverse. In addition to raising snails in cages in the sea, the locals also raise snails in ponds and lagoons by bringing in water from the sea.

Compared to other localities, Khanh Hoa province has a stable seawater environment all year round, the average sea water temperature ranges from 28.9 to 30oC, the salt concentration ranges from 32.4 to 33‰, and the dissolved oxygen content is from 32.4 to 33oC. High water solubility from 5.0 to 5.3mg/l, NH4 and NO2 content below the acceptable threshold. This farming environment is relatively clean so that the snails rarely have diseases, people in Khanh Hoa province can be proactive in the source of seed. The initiative in seed source helps snail farmers in Khanh Hoa province have many opportunities to choose good varieties for stocking.

People in Khanh Hoa raise 2 batches of snails per year (the main crop is stocked from March to April, and the second season is stocked from September to October), while other provinces must import snails from Khanh Hoa to raise them. and can only raise 1 crop/year. In the sub-culture, although this is the rainy season in Khanh Hoa province because the characteristics of the snail farming area are not near the big river mouth, the salinity and water temperature are still guaranteed for the snails to grow and develop well.

Unlike other localities, which are made of harvested by the utilisation of rudimentary homemade tools to dig and dig up the bottom of the base to raise snails, the people of Khanh Hoa use shoveling machines. The island cultivator will help the bottom of the snail farming to be more evenly and evenly cleaned. On the other hand, using a cultivator will help the food sources in the farming area be evenly distributed, so in a farming crop, most of the Khanh Hoa snail's mass is uniform, there are few big and small snails, and the veins on the shell are evenly spaced. In farming areas with dirty bottoms, sweet snails are susceptible to diseases, and the veins on the shells are uneven.

The food sources for these snails are mainly wild creatures in Khanh Hoa waters such as scad, halibut, and anchovies, which are controled properly by local people to avoid overfeeding them.
